Black rice dessert pudding

A super quick and easy low GI dessert pudding that just need 15 minutes to put together with our organic black rice flour ! Skip the hassle of cooking black rice from scratch and blending steps!

Why black rice for dessert?

After a full meal, the last thing you need from a dessert is to give you another sugar rush that gives your blood glucose level another spike.

Research from NUS has found the ability of black rice to slow down absorption of carbohydrates, thus improving blood sugar control and is diabetic friendly.

Of all rice variety, black rice is richest in powerful disease-fighting anthocyanin antioxidants, which also has anti-inflammatory properties, and is rich in potassium and magnesium.

Black rice dessert pudding (serves 2)

 For the pudding:

  • 3 tablespoons of organic black rice flour
  • 1 cup of milk (coconut milk or your favourite nut milk)
  • 1/2 cup of water (to prevent the pudding from thickening too fast)
  • 1.5 tablespoons of raw honey
  • Pinch of pink Himalayan salt

For the topping (actually any fruits you fancy, here are our suggestions):

  • Red dragon fruits (give subtle sweetness)
  • Cacao nibs (a healthy way of having chocolates)
  • or both
Step 1.

Bring the milk into simmer and add 3 tablespoons of organic black rice flour, whisking constantly to avoid lumps. Turn down the heat once the mixture starts to bubble and thicken up. Add water if necessary for the mixture to cook thoroughly for 1 minute.

Step 2.

Add a pinch Himalayan salt, 1.5 tablespoons of raw honey and mix well. Turn off the heat. Your pudding is ready!

Step 3.

Assemble! Scoop the black rice pudding into a bowl, or a glass or a jar.

Wait for 5 minutes for the pudding to cool down a little.

Add fruits and cacao nibs.

You can also pre-make this and served chill.
